Diabetic Recipe - Turkey Loaf (8 servings)



2 pounds ground turkey 
1 cup carrot, shredded 
1/2 cup rolled oats, quick (not instant) 
1/2 cup celery, chopped 
1/4 cup onion, chopped 
1/4 cup parsley, fresh, minced 
1 egg 
1/4 cup water 
1/2 teaspoon each: sage, thyme, margoram, and oregano leaves 
1 teaspoon worcestershire sauce 
1/2 teaspoon black pepper, freshly ground 
1/4 cup ketchup 
3/4 teaspoon dry mustard 

Preparation Method

1. Preheat oven to 350F.
2. In a medium bowl, combine turkey, carrots, oats, celery, onion, parsley, egg, water, herbs, Worcestershire sauce, and pepper. Press into a 9- by 5-inch load pan.
3. In a small bowl, combine catsup and mustard. Spoon over meat loaf. Bake 45 minutes. Cut into 8 equal slices.
