Diabetic Recipe - Seafood Stew (6 servings)



1 cup onion, chopped 
1 clove garlic, minced 
2 cups tomato, chopped, fresh 
2 10 1/2-ounce cans condensed beef consommé (preferrably low-sodium)
1/2 cup sherry, cream 
4 slices lemon 
3 allspice, whole 
1 bay leaf 
1 pound frozen fish filet or fresh, skinned 
1 pound shrimp, deveined 
1 10-ounce can clams or one dozen, chopped, undrained 
1/4 cup parmesan cheese, grated 

Preparation Method

1. Simmer onion, garlic, tomatoes, beef broth, sherry, lemon slices, and seasonings, uncovered, for 30 minutes.
2. Cut fillets into large chunks. Add fish, shrimp, and clams pot. Simmer 15-20 minutes or until clams open. Top with grated Parmesan cheese. Serve with salad and garlic bread.
