Diabetic Recipe - Lemon Chicken (4 servings)
4 chicken breasts halves, skinned and boned
2 lemons (juice of 2 lemons)
1 tablespoon butter, unsalted
1/2 cup white wine, dry
1. Flatten chicken with a tenderizer or mallet to about ¼-inch thickness. Pour lemon juice over and marinate in refrigerator at least 4 hours.
2. Melt butter in a skillet over medium heat. Sauté breasts for 5 minutes on each side. Remove and place on hot platter to keep warm.
3. Pour wine into skillet, stirring. Let boil for a few minutes, then pour over chicken.
