Diabetic Recipe - Lamb Stew (6 servings)

Ingredients

1 teaspoon vegetable oil 
2 pounds lamb for stewing, cut into 2-inch cubes 
1/2 cup unbleached flour, white 
1 teaspoon black pepper, freshly ground 
2 cloves garlic, minced 
2 teaspoons celery seeds 
3 carrots, quartered 
6 white onions (small) halved 
1/4 cup parsley, fresh, minced 
2 teaspoons worcestershire sauce 
3 cups tomato juice 

Preparation Method

Heat heavy deep pan, greased lightly with oil. Dip lamb in flour. Brown well. Add all remaining ingredients. Cover and simmer until fork-tender, 1-2 hours.
