Most liver paté contains high amount of saturated fat. This pate is relatively low in fat content and is a suitable choice if you are on diabetic diet.

  • 2 cup portobello mushrooms, chopped
    2 tablespoons extra virgin olive oil
    4 cloves garlic, minced
    2 tablespoon white wine
    1/4 teaspoon white pepper
    1/4 teaspoon salt
    1 tablespoon fat-free sour cream.

Combine mushrooms, oils and garlic in a small saucepan. Cover and cooked over low heat for 10-12 minutes until mushrooms is tender and fragrant with little liquid remain.  Add wine cooked for 2 minutes.

Add salt and pepper, transfer to food processor. Add 1 tablespoon of fat free sour cream to facilitate processing.  Process until smooth. Serve with pita, or French bread sliced.

Diabetic Appetizer Recipes - Tapenade (4 servings)

Tapenade is basically an olive pesto. Enjoy this recipes spread on a slice of crusty country bread, or use it as a garnish on grilled salmon.

 

  • 3 cloves garlic, peeled
    2 cup pitted black olive drained
    1 cup pitted Greek olives
    1/2 cup olive oils
    1 tablespoon squid ink, optional
    1/2 cup Parmesan cheese, grated
    white pepper to taste
    1/2 cup walnuts, chopped

Place garlice, olives in food process and chop fined. Add olive oil and squid ink and process until combined.

Add cheese and white pepper and pulse to combine.  Add walnuts and process. Store in plastic container and chill before serving.

Nutrient per servings: 205k calories, 3 grams protein, 4 grams carbohydrate, 20 grams fat, 2 gram fiber, 445 miligrams sodium.
